Jimador Bar & Grill — Authentic Mexican Restaurant in Sunriver

Rooted in Jalisco • Shared With the World

For generations, our table has gathered families around recipes, margaritas, and the quiet warmth of Jalisco — a living tradition, carried forward one welcome at a time.

Rooted in JaliscoHonored in Central Oregon

Where Heritage Found a Home

Every remarkable place begins long before its doors ever open.

Before the recipes. Before the celebrations. Before generations gathered around one table—there was a vision.

A vision that believed hospitality should never feel transactional. It should feel like coming home.

The Man Behind the Legacy

When that vision arrived in Central Oregon in 1996, it carried far more than family recipes. It carried patience. Tradition. A reverence for craftsmanship, and an unwavering belief that every guest deserved to be welcomed like family.

That vision belonged to founder Don Roberto Anaya.

What began with a single dining room soon inspired an entire movement. Generations of families discovered authentic Mexican hospitality. Neighborhood traditions were born. Celebrations found a home—and a new appreciation for the richness of Jalisco’s culinary heritage quietly took root across Central Oregon.

Some legacies are measured in buildings. Others are measured in the lives they quietly touch. The greatest ones become part of a community’s story.

Today, Jimador Bar & Grill honors those beginnings—not by looking backward, but by carrying forward the same philosophy that welcomed the very first guests.

Every recipe reflects patience. Every margarita celebrates craftsmanship. Every gathering keeps that original spirit alive.

Some places are remembered for what they built.

Others, for how they made people feel.

Here, every welcome is intentional,

every recipe tells a story,

and every table invites another generation

to become part of the legacy.

“Hospitality is not measured by the number of guests you serve, but by how many leave feeling they have found another home.”

The Heart of the Craft

What Is a Jimador?

The jimador is the master harvester of the agave — the one who reads the land, knows the exact moment a plant is ripe, and frees its heart with the coa. It is the most demanding, most respected craft of all. To say “jimador” is to name the very base and beginning of everything — like saying torero.

That is who Don Roberto is — the one who laid the foundation, and perfected it.

From Field to Barrel

The Making of Tequila

Harvested, cooked, crushed, boiled, fermented, distilled, and rested in oak — the patient craft that carries the agave from the earth to your glass.

01

The Jima

With the coa de jima, the jimador trims away the leaves to free the piña — the agave's sweet heart, ripened over six to eight years.

The Cooking — the agave-to-tequila journey at Jimador tequila bar, Sunriver Oregon
02

The Cooking

The piñas are slow-cooked in stone hornos, where the heat transforms the agave's starches into sweet, caramelized sugars over many hours.

Crushing & Fermentation — the agave-to-tequila journey at Jimador tequila bar, Sunriver Oregon
03

Crushing & Fermentation

The cooked agave is crushed to release its juice, which is then brought to a gentle boil and left to ferment — where natural yeasts turn sugar into the soul of the spirit.

Distillation & The Barrel — the agave-to-tequila journey at Jimador tequila bar, Sunriver Oregon
04

Distillation & The Barrel

Twice distilled in copper stills, the spirit is laid to rest in oak barrels — where time, wood, and patience give tequila its color, depth, and character.

Añejo tequila expression served at Jimador tequila bar in Sunriver, Oregon
One to three years

Añejo

Añejo tequila matures for one to three years in oak barrels, creating extraordinary depth with notes of dark chocolate, toasted oak, dried fruit, caramel, and rich complexity.
